Stir in the green onions and cheese and gently stir to mix. Stir in the sour cream, 2 tablespoons sliced butter, and salt and pepper to taste: the mixture should be highly seasoned. Stir as little and gently as possible so as to leave some texture to the potatoes. Stuff the potato mixture back into the potato skins, mounding it in the center.
